How to Make Bagara Baingan – Step-by-Step

Step 1: Prepare the Curry BaseDry roast the peanuts, sesame seeds, and coconut until golden and aromatic. Let them cool, then grind into a smooth paste using a little water.
Step 2: Prep the BrinjalsWash and slit the brinjals into quarters lengthwise without cutting through the stems. Soak in salted water to prevent discoloration.
Step 3: Fry the BrinjalsHeat 2 tablespoons of oil in a deep pan. Shallow-fry the brinjals until they are about 80% cooked and slightly browned. Remove and set aside.
